How to make the perfect South Indian filter coffee

A five-minute guide to decoction, ratio and the frothy pour that makes degree coffee what it is.

  1. 1. Measure. Two heaped tablespoons (about 20g) of coffee per 100ml of decoction.
  2. 2. Pack. Level the grounds in the upper chamber and press gently with the plunger — firm, not compacted.
  3. 3. Bloom & brew. Pour a little boiling water, wait 30 seconds, then fill. Cover and rest 15–20 minutes.
  4. 4. Serve. One part decoction to three parts hot milk, sugar to taste. Pull between tumbler and davara until frothy.
